Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.

I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.

Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.

I got a question, do you all think it's safe to make cookies to share in such a germ filled house? Hubby has covid and I'm still waiting. I suspect yes but it just feels germy in here. 😆

Psue - I put eggshells in my coffee grounds this morning and they do make a difference. The coffee is "smoother". I like it and will continue with it.

One day I will try Swedish Egg Coffee where you combine the grounds with a whole egg including the shell if you wish. At camp coffee was always made in the campfire manner on a wood stove. Enamel coffee pot, water, grounds dumped in and the whole thing left to simmer till the grounds dropped to the bottom. That's when you knew it was ready. The smell of it was wonderful in fresh morning air.

Ham, cauliflower mac cheese, and cabbage fritters for supper.

I froze the leftover turkey sausage and cornbread stuffing I used for the Butternut squash on Thanksgiving. I’m going to heat it up in a frying pan, poke a couple holes in it, crack an egg in each hole and heat until the eggs are set. I’ll serve with air fried broccoli.

Tonight I've cooked up some perogies with ham, onions, red peppers and green beans. I don't care for fried perogies I like them soft, so they just steamed on top of the ham and veggies.

Chili using Mccormick low sodium packet, beef, pinto beans and cornbread. Easy easy, warms tummy on a cold day.

Elder daughter is home from school for a few days. One of her favourites: Chicken with pineapple and peppers on a bed of rice.
Edit: Last exam, written earlier - MATH. 😱

Nacy, I looked up dyscalculia - VERY interesting and I didn’t know it existed, but that’s not what’s going on with me. I definitely have a really bad case of math anxiety. I’m glad they don’t teach math like that anymore.

Dinner? Tomato basil soup, ham on rolls and leftover air fried Brussels sprouts.

Cw, let me know if you want me to send you my salad recipe via private message.
Keep in mind that if the fondue is good you will not be hungry when you leave. (I’ve got an outstanding recipe for that too!)

I was just in Phoenix and in a "healthy" quick-food restaurant my son ordered a chia seed "pudding" parfait. I would never in 1000 yrs have ordered such a thing (also because one of the ingredients was coconut which I'm not fond of) but as he was eating it curiosity got to me so I had a spoonful. I wanted to finish it. I looked up the pudding part recipe: It is chia seeds soaked overnight in both coconut water and coconut milk, with some cinnamon, a little salt, agave syrup and they garnished it with fresh blueberries, cut stawberries and crunchy honey-oat granola. I went back the next day and got the banana chocolate syrup granola version. I can't wait to make it at home, I hope it tastes the same. Looking to improve my very unhealthy evening snack-while-watching-kdramas habit.

Oooo, I like the broccoli salad with a lemony dressing idea, something to balance the inevitable fat, carb and meat dominance. And adding something like faro would almost make it a meal in itself, which is good because I'm a little concerned that this might have us hitting a drive through when we get home.

Cw, If we’re talking cheese fondue, crusty French bread or pretzel bread, or any vegetable crudités that hold together when dunked.
Something fun and sparkly to drink or a light, fruity dessert? Maybe a light, cold side dish like broccoli faro salad with lemony dressing.

I'm thinking a plater of things like summer sausage, and pepperoni, mostly meats, because fondue is usually cheese.

Okay everyone I'd like a little advice -
We are invited to nephew#1's place the Saturday before Christmas and the menu apparently will be fondue. Bearing in mind some of us will be travelling hours to get there and home again, what can we bring to supplement this meal?

Peasuep, you could actually have a touch of dyscalclia. It's math dyslexia. Look it up when your board, see if you relate at all.

I’m math-phobic. Have been since 4th grade and those times tables records Mrs. Larson would put on the portable record player and then adjust the speed depending on how sadistic she felt that day.

She was a great teacher - changed my life in some very positive ways. But now, numbers make me cry. I’ve always thought that’s why I never know how old I am and can never figure it out without help. But maybe it’s more common than I thought.

Boy am I going to be in trouble when I start having cognitive tests! If I’m asked to count backward from 100 by 7s I may disintegrate.

Happy birthday to you too Nacy! Birthdays haven’t been relevant to me since I was a young bride, when every birthday and holiday was a test of my first husband’s love. Good grief, ‘what fools these mortals be!’

I used to do something similar Anxietynacy, when I got into my late 40's I'd say I was 50ish, and the same when I was in my late 50's. I also found myself having to stop and think about my real age LOL

In my mid 50s I kept saying I was a year older than I was, so I wouldnt be in shock when I got up there in age. Believe it or not one year. I was 57 and insisted I was going to be 58.. I had to sit down and figure out my birthday dates and do some math and mom was right, 😂 I was only 57. That was kind of nice to be 57 for 2 years.

I figured out the birthdays come whether we celebrate or not so at the very least we may as well get cake🎂
Two of our boys were December babies, birthdays at this time of year can be a challenge when everybody is focused on Christmas.
